A blend of 3 olive varieties: Picudo, Hojiblanco and Picual
An attractive and complex aroma of warm, spicy greenery and herbs with flowery apples which are joined by green bananas, citrus fruit and a touch of pineapple and tropical fruits.
The flavours are lightly nutty and stalky to start but build up with bitter herbs, including rocket and mustard leaf and a touch of orange zest. Perrer comes in to warm the mouth and lingers into an after taste with a salad bowl of leaves with sorrel and tomatoes.
This is a medium style of oil with well balanced bitterness and pepper.
An excellent oil for most culinary applications and an excellent dipping oil.
