The trees of this variety (Arbequina) have a weeping appearance with an average density at the top.
The fruits are small and round with a colour between green and purple.
They produce fruity oil, yellow-greenish in color, with a mild aroma that is reminiscent of apple and almond.
Experts recommend consuming this variety of oil raw so that it may serve to enrich salads or fish;
or simply on toasted bread topped with tomato and salt.
Both the olive grove and the oil press are located on the Duernas Estate.
Duernas has been property of the Serrano-López Family for generations and is currently
led by Ninasol López-Méndez.
The family’s philosophy, which is deeply rooted in Christian humanism,
has maintained itself throughout the centuries, and with the same savoir faire.
The family and its estate are invested in the improvement of the earth, its cultivation,
and professional work.
Envero is the manifestation of the continuous change in nature.
This stage is the precise moment of the greatest beauty and richness of the olive grove, when the young olives colour the tree in green,
yellow, cherry red, and an almost purple tone.
The pearl like fruit contains the freshest of olive juices. This "Envero Moment" is captured during a 2-week period each year.
